Hi, I’m Kirsten Walker and welcome to my blog!
I have been in love with ladybugs ever since I was a young girl and I still love them today! My earliest memories of cooking involve my mom and I making her famous chocolate chip cookies. She always let me help out in the kitchen whether it was helping to knead dough, or scrambling eggs. Cooking has become my part-time ‘hobby’ over the past few years, so much so that my husband now buys me gifts that support my hobby.
My journey to a plant based diet began in August of 2011 when my husband and I watched the documentary Forks Over Knives; it pretty much changed our attitude towards animal based protein. In January of 2012 I completed a Whole Foods 28 day challenge based on the Engine 2 Diet and have been eating a plant based diet ever since. Having more energy, feeling better and losing those last few stubborn pounds are a few of the “side effects” of this lifestyle; and it is a lifestyle, not a diet. My biggest challenge with this new lifestyle was learning how to cook differently. I did not want to stop cooking but knew that cooking with olive oil and animal protein was in my past. Being middle-aged and learning to do something new is not always an easy task, but I stuck with it and have been rather successful with my cooking (or so my hubby tells me!). When I tell people I eat a whole foods, plant based diet that does not include animal protein or oil, they always ask me “So what CAN you eat?” I decided to create this blog to share meals, recipes (mine and others), ideas, and resources to show how flavorful and fun plant based eating can be.
I’ve chosen this way of eating so I can grow old with vitality. I don’t want to depend on medication to keep me healthy. As Socrates said many years ago, ‘let thy food be thy medicine and medicine be thy food”.
